Potatoes:
1 1/2pounds baby potatoes (halved)
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Toppings:
1cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Zest of 1 lemon (optional)
Chili flakes to taste (optional)
Instructions
Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Toss potatoes: In a large bowl, toss the halved potatoes with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.
Roast potatoes: Spread the potatoes in a single layer on the baking sheet, cut side down. Roast for 25–30 minutes until golden and tender, flipping halfway through for even browning.
Add feta: Remove from the oven and sprinkle with crumbled feta. Return to the oven for 5 more minutes to soften the cheese slightly.
Finish and serve: Transfer to a serving dish and top with parsley, lemon zest, and chili flakes if desired. Serve hot.
