Cod:

  • 1/4 cup fresh orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons white wine vinegar
  • 1 shallot, finely minced
  • 1/2 cup cold unsalted butter, cubed
  • 1 teaspoon Dijon mustard (optional)

Instructions
