2 ripe avocados, halved and pitted
4 small eggs
1 tablespoon olive oil
Salt and black pepper to taste
1/4 teaspoon smoked paprika (optional)
Chopped chives or parsley for garnish
Turkey Slices:
4 slices deli turkey breast, halved or folded
Instructions
Preheat the oven: Preheat the oven to 425°F.
Prepare avocados: Scoop out a small amount of flesh from the center of each avocado half. Place avocado halves in a baking dish.
Crack and fill: Crack one egg into a bowl, then gently pour into each avocado half. Season with salt, pepper, and smoked paprika.
Bake: Bake for 12–15 minutes until egg whites are set but yolks are slightly runny.
