A delightful and nutritious side dish featuring crisp green beans tossed in a creamy avocado Caesar dressing.

Green Beans:

  • 1 pound green beans (trimmed)

Avocado Caesar Dressing:

  • 1 ripe avocado
  • 1 garlic clove (minced)
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons grated Parmesan cheese
  • Salt and black pepper to taste
  • Extra Parmesan and cracked pepper for garnish (optional)

Instructions

  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add green beans and blanch for 2–3 minutes until bright green and just tender. Drain and immediately transfer to a bowl of ice water to stop the cooking. Drain again and pat dry.
  2. Prepare the Avocado Caesar Dressing: In a blender or food processor, combine avocado, garlic, lemon juice, olive oil, Dijon mustard, Parmesan cheese, salt, and pepper. Blend until smooth and creamy.
  3. Toss and Serve: In a large bowl, toss the green beans with the avocado Caesar dressing until evenly coated. Serve immediately, garnished with extra Parmesan and black pepper if desired.

Notes

  • For a vegan version, use nutritional yeast instead of Parmesan.
  • You can also serve this dish chilled as a refreshing side for summer meals.
