For the Chicken:
4 boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon tomato paste
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic (minced)
For the Sautéed Garlic Spinach:
1 tablespoon olive oil
3 cloves garlic (thinly sliced)
8cups fresh baby spinach
pinch of salt and pepper
squeeze of lemon juice (optional)
Instructions
Marinate the Chicken: In a bowl, combine olive oil, apple cider vinegar, soy sauce, brown sugar, tomato paste, paprika, cumin, oregano, salt, pepper, and garlic. Coat chicken evenly and marinate for at least 30 minutes.
Cook the Chicken: Sear marinated chicken in a hot skillet for 5–6 minutes per side until fully cooked. Rest for 5 minutes.
Prepare the Spinach: Sauté garlic in olive oil until fragrant. Add spinach and cook until wilted. Season with salt, pepper, and lemon juice.
Serve the chicken with garlic spinach on the side.
