Love Arby’s Beef and Cheddar but can’t always make it to the restaurant? Try this delicious copycat recipe at home! Tender roast beef, tangy cheddar cheese sauce, and a soft onion bun come together to recreate that classic Arby’s flavor.

For the Roast Beef:

  • 1 lb thinly sliced roast beef
  • 1/2 cup beef broth
  • 1/4 cup onion, chopped
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the Cheddar Sauce:

  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

For Assembling:

  • 4 onion buns

Instructions

  1. Prepare the Roast Beef: In a saucepan, combine the roast beef, beef broth, onion, ketchup, brown sugar, salt, and pepper. Cook over medium heat until heated through.
  2. Make the Cheddar Sauce: In a separate saucepan, melt the butter. Stir in the flour, then slowly whisk in the milk until smooth. Add the cheddar cheese and stir until melted and smooth. Season with salt and pepper.
  3. Assemble the Sandwiches: Divide the roast beef among the onion buns. Top with a generous amount of cheddar sauce. Serve hot and enjoy!
