This Apple Radish and Watercress Salad with Pistachio Chile de Árbol Dressing is a vibrant and flavorful dish that combines the crisp sweetness of apples, the peppery bite of radishes, and the freshness of watercress, all brought together with a zesty, nutty dressing.

Ingredients

Watercress:

  • 4 cups watercress, tough stems removed

Apples:

  • 2 medium crisp apples (such as Honeycrisp or Fuji), thinly sliced

Radishes:

  • 68 radishes, thinly sliced

Pistachios:

  • 1/2 cup shelled pistachios

Chiles de Árbol Dressing:

  • 2 dried chiles de árbol (or to taste)
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Toast Pistachios: In a small dry skillet over medium heat, toast the pistachios for 2–3 minutes until fragrant, then transfer to a blender or food processor.
  2. Toast Chiles de Árbol: In the same skillet, toast the chiles de árbol for 30–60 seconds until just fragrant. Add the chiles to the blender with the pistachios, olive oil, lime juice, honey, salt, and black pepper. Blend until smooth, adding water if needed for desired consistency.
  3. Assemble Salad: Arrange the watercress, apple slices, and radishes on a serving platter. Drizzle with the pistachio chile dressing and toss lightly to coat. Serve immediately.
