Cookie Dough:
1cup unsalted butter (softened)
3/4cup brown sugar (packed)
1/2cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
3cups old-fashioned rolled oats
1cup finely chopped peeled apple (about 1 medium apple)
3/4cup raisins
Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the butter and sugars: In a large bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy.
Add eggs and vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
Combine wet and dry ingredients: Gradually stir the dry ingredients into the wet mixture until just combined.
Stir in oats, apple, and raisins: Fold in the oats, chopped apple, and raisins.
Bake: Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 10–12 minutes or until the edges are golden and the centers are set.
Cool: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use a firm-sweet apple variety like Honeycrisp or Fuji for the best texture.
For added richness, mix in ½ cup chopped walnuts or pecans.
These cookies freeze well—store in an airtight container for up to 3 months.
