For the Quesadillas:
4 large flour tortillas
4oz cream cheese, softened
2 tbsp maple syrup or honey
1 tsp vanilla extract
2 medium apples, thinly sliced
1 tsp ground cinnamon
1 tbsp butter
2 tbsp brown sugar
powdered sugar for dusting (optional)
Instructions
Mix Cream Cheese: In a small bowl, mix the softened cream cheese with maple syrup and vanilla extract until smooth.
Assemble Quesadillas: Spread the cream cheese mixture evenly over half of each tortilla. Arrange thinly sliced apples on top and sprinkle with cinnamon and brown sugar.
Cook Quesadillas: Fold the tortillas in half to enclose the filling. Heat a large skillet over medium heat and melt the butter. Cook the quesadillas for 2 to 3 minutes per side until golden brown and the filling is warm.
Serve: Transfer to a cutting board, slice into wedges, and dust with powdered sugar if desired. Serve warm.
Notes
Use tart apples like Granny Smith for a nice contrast with the sweet filling.
You can add a sprinkle of chopped nuts inside for extra crunch.
