Beef Ribs:
2pounds beef short ribs, cut into individual pieces
Vegetables:
1 tablespoon vegetable oil
1 large apple, peeled, cored, and sliced
3 large carrots, peeled and cut into chunks
1 small onion, quartered
3 cloves garlic, smashed
1-inch piece of ginger, sliced
2 green onions, chopped for garnish
Seasonings:
8cups water
1 tablespoon soy sauce
1 tablespoon rice wine or dry sherry
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Sear the Beef: In a large pot, heat oil and sear beef ribs until browned.
Add Ingredients: Add apple, carrots, onion, garlic, and ginger.
Cook: Pour in water, simmer until beef is tender.
Season: Stir in soy sauce, rice wine, salt, and pepper.
Finish and Serve: Adjust seasoning, remove ginger and onion, garnish with green onions.
Notes
For a clearer broth, parboil ribs for 5 minutes before searing.
