1/2cup apple butter
1cup granulated sugar
1 large egg
1 teaspoon vanilla extract

2 teaspoons cream of tartar

Cinnamon Sugar Coating:
2 teaspoons ground cinnamon
1/4cup granulated sugar (for rolling)
Instructions
Preheat the oven: Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
Cream butter, apple butter, and sugar: In a large bowl, cream together the softened butter, apple butter, and 1 cup sugar until light and fluffy.
Add egg and vanilla: Beat in the egg and vanilla extract until combined.
Combine dry ingredients: In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Prepare cinnamon sugar coating: In a small bowl, combine the 2 teaspoons cinnamon and 1/4 cup sugar for rolling.
Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, then coat each ball in the cinnamon-sugar mixture. Place on baking sheets and bake for 10–12 minutes until edges are set but centers are still soft.
Cool and serve: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra apple flavor, add 1/2 teaspoon ground nutmeg to the dough.
