Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, cornmeal, baking powder, sugar, salt, and pepper.
  2. Combine Wet Ingredients: In a separate bowl, whisk together the milk and egg. Add the wet ingredients to the dry ingredients and stir until just combined.
  3. Add Onions: Fold in the chopped onions until evenly distributed.
  4. Fry: Heat about 1/2 inch of vegetable oil in a heavy skillet over medium heat. Drop the batter by heaping tablespoons into the hot oil, flattening slightly. Fry 2–3 minutes per side or until golden brown and crisp.
  5. Serve: Remove fritters with a slotted spoon, drain on paper towels, and serve warm.
