Blondie Batter:

  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Additional Mix-Ins:

  • 1/2 cup sliced almonds
  • 1 cup chopped croissants (about 2 small croissants)
  • 1/4 cup almond paste, crumbled or in small chunks

Optional Topping:

  • 1 tablespoon turbinado sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix the batter: In a large mixing bowl, whisk together melted butter and brown sugar until smooth. Add eggs, vanilla extract, and almond extract, and mix until fully combined. Stir in the flour, baking powder, and salt just until no streaks remain.
  3. Add mix-ins: Fold in sliced almonds, chopped croissants, and almond paste. Pour the batter into the prepared pan and smooth the top. Sprinkle with turbinado sugar if desired.
  4. Bake: Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out mostly clean.
  5. Cool and slice: Let cool completely in the pan before slicing into squares.
