Ingredients

Units Scale

Cookies:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup finely ground almonds (or almond flour)
  • Additional powdered sugar for dusting

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large mixing bowl, cream together the butter and powdered sugar until light and fluffy. Add the vanilla and almond extracts and mix to combine.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, and ground almonds. Gradually add the dry ingredients to the butter mixture and mix until a soft dough forms.
  4. Shape and Bake: Scoop about 1 tablespoon of dough and shape it into a crescent. Place on the prepared baking sheet, spacing cookies about 1 inch apart. Bake for 12 to 15 minutes, or until lightly golden. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack.
  5. Dust with Sugar: While still slightly warm, dust generously with powdered sugar.

Notes

  • Store cookies in an airtight container for up to a week.
  • For extra almond flavor, add almond extract to the powdered sugar used for dusting.
  • Cookies freeze well and are perfect for holiday treats.
