  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/2 cup melted dark chocolate (60-70%)
  • 1/3 cup finely chopped almonds

For the topping:

  • 1/2 cup heavy cream
  • 4 oz semisweet chocolate, chopped
  • 1/4 teaspoon almond extract
  • 2 tablespoons chopped almonds (for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Prepare the crust: Mix chocolate cookie crumbs, sugar, and melted butter. Press into the pan and bake.
  3. Make the filling: Beat cream cheese, sugars, eggs, sour cream, extracts, melted chocolate, and almonds. Pour over crust.
  4. Bake: Bake for 50–60 minutes, then cool and chill.
