- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1.5 teaspoons cracked black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon paprika (optional)
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 20–30 minutes if using.
- In a large bowl, mix olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, salt, and paprika.
- Add the chicken pieces to the marinade and toss to coat evenly. Let marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
- Preheat the air fryer to 380°F (193°C).
- Thread marinated chicken pieces onto skewers.
- Place the skewers in the air fryer basket in a single layer without overcrowding.
- Air fry for 10–12 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and is slightly charred at the edges.
- Remove and let rest for a few minutes before serving.
Notes
- For extra zest, sprinkle more lemon juice on top before serving.
- You can add vegetables like bell peppers or onions to the skewers.
- Store leftovers in an airtight container in the fridge for up to 3 days.
