Catfish Nuggets:

  • 1 pound catfish fillets cut into 1 1/2-inch nuggets
  • 1 cup buttermilk
  • 1 teaspoon hot sauce (optional)

Cornmeal Coating:

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil spray or cooking spray
  • Lemon wedges for serving

Instructions

  1. Marinate the Catfish: Place catfish nuggets in a bowl, cover with buttermilk and hot sauce. Refrigerate for at least 30 minutes.
  2. Prepare the Coating: In a shallow dish, combine cornmeal, flour, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.
  3. Dredge the Catfish: Remove catfish from buttermilk, coat each nugget in the cornmeal mixture.
  4. Cook in Air Fryer: Preheat air fryer to 400°F (200°C). Arrange nuggets in a single layer, spray with oil. Cook for 10–12 minutes, flipping halfway.
  5. Serve: Serve hot with lemon wedges or dipping sauce.
