  • 1/4 cup light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients:

  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/4 cup applesauce
  • 1 teaspoon vanilla extract

Add-Ins:

  • 1 1/2 cups finely grated carrots
  • 1/4 cup crushed pineapple (drained)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Prepare the Batter: In a large bowl, combine the dry ingredients. In a separate bowl, whisk together the wet ingredients until smooth. Add the wet mixture to the dry ingredients and stir until just combined.
  2. Combine and Bake: Fold in the grated carrots, crushed pineapple, and nuts. Pour the batter into a greased 6-inch round cake pan. Preheat the air fryer to 320°F (160°C), then bake the cake for 30–35 minutes until a toothpick inserted in the center comes out clean.
  3. Cool and Frost: Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Frost with cream cheese frosting if desired.

Notes

  • Ensure the cake pan fits in your air fryer basket.
  • You can double the recipe for a larger cake baked in a traditional oven.
  • Cream cheese frosting complements the cake well but is optional.
