For the Stew:
1 tbsp vegetable oil
1 1/2lbs boneless skinless chicken thighs (cut into chunks)
Salt and black pepper to taste
1 large onion (chopped)
3 garlic cloves (minced)
1 tbsp fresh ginger (grated)
1/2 tsp ground cayenne pepper (optional)
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp ground coriander
1 (14.5 oz) can diced tomatoes
1/2cup natural peanut butter
4cups chicken broth
2 medium sweet potatoes (peeled and cubed)
1 red bell pepper (sliced)
2cups chopped collard greens or spinach
Juice of 1 lime
For Garnish:
Chopped roasted peanuts
Fresh cilantro
Instructions
Season the Chicken: Season chicken pieces with salt and pepper.
Sear the Chicken: In a large pot or Dutch oven, heat oil over medium-high heat. Add chicken and sear for 4–5 minutes until browned. Remove and set aside.
Add Tomatoes and Peanut Butter: Add diced tomatoes and peanut butter, stirring until smooth. Pour in chicken broth and bring to a simmer.
Cook the Stew: Return chicken to the pot along with sweet potatoes and red bell pepper. Simmer for 20–25 minutes until the chicken is cooked through and sweet potatoes are tender. Stir in greens and cook for another 2–3 minutes until wilted.
Finish and Serve: Finish with lime juice and adjust seasoning to taste. Serve hot, garnished with peanuts and cilantro if desired.
Notes
Serve over rice or with flatbread for a heartier meal.
You can substitute almond butter for peanut butter if needed.
